Stracciatella Cheese is soft, fresh cheese may be best known as the delicious center of burrata. Stracciatella means “rag,” from the Italian word “strattore” (to stretch), and actually the meaning elaborates the action to make the cheese and the way it looks.

Ingredients

  • 1 tablespoon kosher salt (17 grams)
  • 1 pound mozzarella curd, broken into small pieces
  • 2 cloves garlic, cut in half
  • 1 cup heavy cream
  • 1/2 cup extra-virgin olive oil, plus more for garnish
  • 1 ripe tomato, cut in half
  • 1 baguette, sliced into 1-inch-thick slices
  • Flaky sea salt
  • Freshly cracked black pepper

Preparation

  1. Making mozzarella: Heat 2 quarts of water in a large pot and add kosher salt and allow it to boil for 5 minutes. Let cool to 180 degrees F.
  2. Add mozzarella curd to a large bowl and bring to room temperature. When the water has cooled to 180 degrees F, ladle it onto the curd. After cooling it will look like shaggy mozzarella. Stir and stretch with wooden spoon for 3 minutes or until it forms a ball with plastic like texture.
  3. Shaping mozzarella: Take another large bowel and pour half of the whey water(Salted water used to make mozzarella) and allow it to cool up for 80 degrees F. In the meantime work with the mozzarella with kneading and stretching to make it uniform without lumps. Once the cheese is smooth, pull off a 4-inch section and put it into the second bowl containing the cooled whey water. Repeat this process with the remaining cheese.
  4. Making stracciatella: Take each of the sections of the mozzarella out of the cooled water and pull it to make number of strands (like string noodles of cheese). Put all of the pulled strands of cheese into a mixing bowl and add the heavy cream. Gently stir to make stracciatella. Set aside.
  5. Stracciatella with Bread:Preheat oven to 400 degrees F. Place Bread slices on a baking sheet. Drizzle olive oil over the slices and place in the oven to toast, about 10 minutes. Remove from oven and, while still warm, rub cut side of garlic over the toasted bread. Then rub the bread with the cut side of tomato while gently squeezing the tomato halves. Top slices with a generous spoonful of stracciatella followed by a drizzle of olive oil, flaky sea salt and freshly cracked black pepper.
