Seafood pie includes an indulgent mix of seafood and fish and is topped with fluffy potatoes – Baked to taste a perfect Pie!

Ingredients
- 1.5kg King Edward potatoes
- 2 tbsp olive oil
- 200g undyed smoked haddock
- ¼ tsp cayenne pepper
- 150g cooked prawns
- 150g lightly smoked salmon fillet
- 250g cod loin
- 3 tbsp finely chopped fresh chives
- 600ml unsweetened soya milk or full fat cow’s milk
- 2 tbsp cornflour
- 1 bay leaf
- 200g queen scallops
Instructions for making Seafood Pie
- Preheat the oven for 200 C . Boil the potatoes for 20 min/until it’s soft with water.
- In the meantime remove/ clean scallops, Cod and fish and cut into small pieces.
- Take 500 ml of Soy milk and heat it slightly without allowing it to boil. Reduce heat and add fish, scallops and cod in that order and poach.
- Using slotted spoon transfer seafood to oven proof dish.
- Prepare a paste with corn flour and mix it with poaching liquid and stir it until it becomes smooth and uniform.
- Stir in with cayenne pepper and pour it over fish.
- Drain the boiled potatoes and smash it with remaining soy milk and olive oil. Make it uniform without any lumps.
- Spoon evenly on top of the fish and smooth with a fork. Bake for 20 minutes until the potatoes are golden.
