- White sugar: 1 1/2 cups
- Water: 1 1/2 cups
- Lemon zest: 1 teaspoon
- Fresh Lavender: 2 springs
- Lemon juice: 3 cups
- Ice cubes: As needed
- Cold tonic water: 1 bottle
Instructions for making Schweppes Bitter Lemon
- Heat water in a saucepan and bring to a boil. Add sugar, lemon zest, and lavender, cover and cook until the sugar is completely dissolved, for about 10 minutes. Remove from heat and allow the syrup to cool to room temperature for about 15 minutes.
- Pour lemon juice into a pitcher, add syrup into the lemon juice through a strainer. Stir to make a homogenous concentrate. Refrigerate until chilled for about an hour.
- Chill the serving glass with ice cubes and pour 2-ounces of concentrate. Top with tonic water.
- Garnish with a thin lemon wheel and serve.
