Portuguese Bean Soup is Packed with smoked ham hocks, Portuguese sausage, veggies, Carrot, Cabbage, and pasta. This is a favorite Hawaii Soup which is traditionally served in Annual Punahou School Carnival. Now itt became popular worldwide.

Ingredients

  • 2 pounds spicy Portuguese sausage, sliced
  • 1 pound ham hocks
  • 1 (16 ounces) packed macaroni
  • 1 onion, sliced
  • 2 celery stalks (diced 1/2 inch)
  • 2 large carrots (peeled and diced 1/2 inch)
  • 2 quarts water OR chicken broth
  • 3 potatoes, diced
  • 1 small head cabbage, chopped
  • 1 (8 ounces) can tomato sauce
  • 2 (15 ounce) cans kidney beans

Directions

  1. In a large pot over low heat, combine sausage, ham hocks, onion, and water. Cover and simmer for 1 hour.
  2. Remove ham hock from soup, remove meat, tear into small pieces, and return meat to pot. Stir in carrots, potatoes, cabbage, and tomato sauce. Cover and continue cooking 60 to 90 minutes more.
  3. Adjust consistency and seasoning with additional water( chicken stock), salt, pepper, and chili sauce.
  4. Stir in beans adding more water as needed, and cook until heated through and Add macaroni as desired and cook until pasta is tender.
