Brisket is a piece of meat from the breast section of the animal. It’s usually tough and boneless. Pork brisket is the meat that comes from the lower shoulder of the pig.
Pork brisket usually takes a long time to cook. It’s usually smoked or grilled. Before cooking it’s seasoned with a seasoning rub and then cook it by folding the seasoned meat in a thick fold of foil. It turns out like juicy, richly flavored and spicy meat, each bite of which gives you a deep refreshment.

Ingredients
For Pork Brisket Rub:
- Kosher salt: 2 tablespoons
- Onion powder: 1 tablespoon
- Ginger powder: 1 tablespoon
- Garlic powder: 1 tablespoon
- Ground cumin: 1 tablespoon
- Cayenne pepper: 1 tablespoon
- Ground white pepper: 1 tablespoon
- Light brown sugar: 2 tablespoons
- Seafood seasoning: 1 tablespoon
- Coarsely ground black pepper: 1 tablespoon
- Dry mustard: 2 tablespoons
For marinade:
- Beef consommé: 1 1/3 cups
- Cold water: 6 ounces
- Worcestershire sauce: 1 tablespoon
- Soy sauce: 1 tablespoon
- Challenge butter: 1 stick
Directions:
- Trim the top fat of brisket while keeping the bottom fat. By using a sharp knife, make deep vertical cuts.
- In a bowl, combine kosher salt, onion powder, ginger powder, garlic powder, ground cumin, cayenne pepper, ground white pepper, black pepper, light brown sugar, seafood seasoning, and dry mustard. Stir to mix well to make a rub.
- Prepare a marinade by mixing beef consommé, cold water, soy sauce, and Worcestershire sauce in a large bowl.
- Marinade the pork brisket and press the marinade into the meat. Let it sit for 20 minutes.
- Remove from the marinade and apply a thick coat of brisket rub and let it for 30 minutes before cooking.
- Preheat the oven to 250 degrees. Place the pork brisket on the grill with the fat side down and cook until the internal temperature reaches 150 degrees for about 3 hours. It depends upon the size of the brisket.
- On reaching the internal temperature at 150 degrees, remove from the oven and fold it in two layers of foil (36 inches each). Pour the remaining marinade over the pork brisket and place one stick of challenge butter over the pork. Seal all the sides of foil and place back onto the grills.
- Check the internal temperature after about 3 hours. If it is 200-210 degrees, it’s done. Remove from the grills and let it folded for about 30 minutes.
- After 30 minutes, unfold the foil and remove the down layer of fat. Dish out in a platter and serve with your favorite sauce and enjoy it.
