Instant Pot Italian Wedding Soup Recipe

Instant Pot Italian Wedding Soup is a healthy Italian delicacy which is easy to make and contains all ingredients for the perfect balanced diet. There are quite a lot of variations and versions of this soup and I had given my version of it. You can prepare it with Beef, Turkey or Chicken.

Ingredients for Meat Balls

  • 1 pound sweet Italian sausage
  • 1/2 pound ground beef (80-85% lean)/Turkey/Chicken
  • 1/2 cup grated parmesan cheese
  • 1/3 cup breadcrumbs
  • 1 teaspoon ground black pepper
  • 2 tablespoons (6 cloves) garlic minced
  • 2 teaspoons seasoned salt
  • 1 teaspoon oregano
  • 2 tablespoons dried parsley
  • 1/3 cup whole milk
  • 1 large egg beaten

Ingredients for Soup

  • 2 Tbsp Extra Virgin Olive Oil
  • 1 med Onion, chopped
  • 3 Carrots, chopped
  • 3 ribs celery, diced
  • 3 cloves Garlic, finely minced
  • 9 cups Low Sodium Chicken Broth
  • 1 tsp Dill, dried
  • 1 tsp Kosher Salt (or 3/4 tsp table salt)
  • 1/4 tsp Pepper
  • 1 bunch basil leaves
  • 3/4 cup Acini di Pepe (or stars, “pastina”)

Instructions

for Meat Balls

  1. In a large bowl Mix the ingredients with hand into a paste(semi solid) like dough.
  2. From that make pinball size meat balls and keep it in a tray.
  3. In the Instant Pot add 2 tablespoon olive oil and press saute on. After the olive oil is little heated up put portion of the meat balls allow it to partially get cooked with flash sear for about 3 minutes.
  4. Remove the meat balls carefully with tong and repeat the same for balance meat balls.

for Soup

  1. Add 2 tablespoons olive oil and then shallots, carrots and celery with Saute mode ON and sauté for 5 minutes. Add garlic and sauté for 1 minute longer. Then, add basil leaves and stir well for about 1 minute. 
  2. Now add broth, pepper and Italian seasoning to it and stir. Now add the meat balls and close the cooker lids. Adjust the Instant Pot to cooking mode. Leave for 5 minutes and quick release when done or as per the directions of manufacturer.
  3. Your soup is ready and add Seasoned salt to your taste.

Why is it called Italian Wedding Soup?

Hey It’s nothing to do with Marriage. In Italian Language “minestra maritata” means “Married Soup” . Since it adds flavors of both meat and vegetables this perfect combination is called “Wedding Soup”.

Can I Use Pork in Italian Wedding Soup?

Yes, You can. You can add Half Pork and Half sausage. You may have to increase the cooking time for preparing pork meat balls. Try to read the manufacturers instructions of Intant Pot for cooking pork.

Which broth is ideal for Italian wedding soup?

You can use any broth flavor you like. In my experience for Pork and Beef meat balls Beef broth is better. For Turkey and Chicken meat balls Chicken broth suits well.
