These crispy looking homemade tortillas also known as the eminent “Mexican chips” are just a fabulous treat and works just marvelous when taken as an afternoon snack or a regular appetizer. However, the opportunities are just boundless you can take any way you like. But honestly, the best part is that it doesn’t even require any special or exotic ingredients to make this striking recipe at home. So, don’t just wait anymore! By the way, these well-famed Mexican chips offers limitless ways to prepare them and is not bounded to a simple old-fashioned, traditional way of cooking and this can be prepared through frying, microwave or oven. Anyway! Let’s get back on our majestic way to healthy, crunchy and tangy tortilla chips:

Skill: Easy Cooking time: 15 minutes
Preparation time: 10 minutes Yields: 1 dozen tortillas (72 chips approx.)

Ingredients:

  • Corn tortillas (standard kind), each tortilla will make 6 chips therefore 12 tortillas will yield 72 chips, optimum for 2-3 people.
  • Table salt.
  • ¾ to 1 cup of extra-virgin olive oil, peanut oil, canola oil, or vegetable oil.
Special note:

Cooking oil is not obligated; you may need it only if you opt to fry the chips, else or otherwise you just need salt and tortilla if you are choosing to prepare them through microwave or oven.

Instructions:

1. Drying the tortillas:

First and foremost the most essential step that you need to do is to dry the tortilla sheets in the oven. Because of drying, tortillas fry better, get crispy and ultimately taste just splendid. Here’s how it’s done:

Take a large baking sheet. Then carefully lay the tortillas on them and put the sheet in the oven for about 5 minutes at 350°F.

A thing that is worthwhile to note here is that you need to make sure that they don’t get too crispy in the oven, you just have to dry them. Don’t bake!

If you don’t just want to use your oven for this purpose, you can simply keep them exposed to air and let them dry overnight! It’s also a great substitute.

2. Cutting the tortillas:

The next step is to precisely cut the tortillas into six equal triangle shaped wedges.

3. Heat the oil in the pan:

Grab a medium-sized frying pan and pour some oil in it, heat the oil on medium heat. Make certain that you are working with a completely dry pan otherwise the oil will start to sputter as it gets warm.

Then check out the temperature by putting a small piece of tortilla in the pan if it comes late the oil is not warm, if it suddenly gets brown the oil is too hot but if it fries a bit and then starts to float then consider the temperature to be optimum.

4. Frying the tortilla:

When the oil gets ready, gently start putting the pierced tortillas in it. I would recommend you to use metal thongs or frying spoon to prevent the tortillas overlapping and distribute them evenly among the pan. Make sure that all the sides get thoroughly coated with oil.

Fry for approximately 2 minutes, until the chips started to get color and gets a little firm and crispy in texture. 

5. Removing the tortillas:

Now almost every major part is completed, the only thing left is to dish-out the fried tortillas on a paper towel lined plate. The use of paper towel is essential here it helps to absorb all the extra and spare and oil from the chips.
