Camarones al Ajillo is an easy to cook Shrimp in Garlic and hot Paprika oil. Camarones is a Spanish term which means Shrimp. Al ajillo is a typical condiment in the cuisines of the Spanish-speaking world.
Ingredients
- 1 pound fresh large shrimp, shelled and deveined
- 1 tablespoon olive oil
- 1/2 green bell pepper, sliced
- 1/4 cup butter
- 10 cloves garlic, pressed
- 1 large onion, sliced
- 1/2 cup tomato sauce
- 1 tablespoon dried parsley
- 1/4 teaspoon crushed red pepper flakes (optional)
Directions
- Heat the olive oil and butter in a skillet over medium heat. Mix in the bell pepper and onion; cook till onion has softened and turned translucent, about 5 minutes. Stir in the garlic, and cook until fragrance comes, about 1 minute more.
- Add the shrimp and cook for about 2 minutes on each side. The cooking time will vary depending on the size of the shrimp. When cooked through, the shrimp will no longer be translucent, will curl and will turn a nice, pink color. Stir in the tomato sauce, parsley, and red pepper flakes, and cook until tomato sauce is warmed through, about 5 minutes. Season with salt and pepper.
- Arrange the shrimp on a platter. Then pour the remaining oil and garlic over the shrimp. Serve with bread for dipping in that delicious garlic oil.
